Paneer-er Dalna Recipe–Niramish| Bengali Paneer Curry with Potatoes, Peas and Capsicum
Paneer’er Dalna
cumin seeds ½ tsp
cardamom 3 pcs, cinnamon 1 pc, cloves 3 pcs
dried red chillies 2 pcs, bay leaves 3 pcs
cumin powder 4g, kashmiri red chilli powder 2g, turmeric powder 4g
sugar 16g, salt 11g
peas 30g, potatoes 150g
capsicum 40g
ginger paste 40g, yoghurt 50g
green chillies 4 pcs
garam masala ¼ tsp, ghee 6g
paneer 400g, 3cm cubes
how to make paneer: link in description
smear with ¼ tsp salt
¼ tsp turmeric
heat pan completely before adding oil this will prevent paneer from sticking
heat vegetable oil, 1mm deep
fry paneer on two sides only unfried surfaces will allow absorption of curry
fry each side until golden
cut potatoes into 3cm cubes
cut capsicum into 2cm squares
heat 15g mustard oil
temper with dried red chillies
bay leaves, cinnamon, cardamom, cloves
cumin seeds
potatoes
cover and fry potatoes until they are golden
make a paste: ginger...
turmeric powder, cumin powder, ...
kashmiri red chilli powder, 100g water
cover and fry spices
salt
if spices dry out, add a splash of hot water and continue frying
capsicum
cover and cook the capsicum
slit green chillies
beat yoghurt until lump-free
lower heat, stir quickly to prevent yoghurt from splitting
cook uncovered on medium heat
blanched peas. If using raw, add them with the potatoes.

250g hot water
wait for it to come to a boil
fried paneer
bubble on medium heat until curry thickens
garnish with garam masala,
ghee, green chilli
Paneer is a late entrant to the Bengali food scene; Bengal is more fond of its chhana (chena). Paneer'er dalna (Bengali paneer curry with potatoes and peas) is infused with the flavours of ginger, cumin, garam masala and ghee. This recipe also uses capsicum, which imparts a lovely peppery aroma to the dish. Here, fresh cubes of homemade paneer are shallow-fried and then added to the curry and cooked until they are soft and juicy. This is a very quick paneer recipe, that is prepared using no onion or garlic and is served with rice and dal, or with light vegetable polao or with luchi.
